Spicy Kimchi Mayo Recipe

Made from creamy mayo, spicy kimchi, sweet Japanese BBQ, and salty soy sauce, this sauce has a perfect balance of flavors and is a breeze to mix together.

One day I was trying to come up with a way to enhance a can of tuna for dinner. From ingredients in my refrigerator, I created this spicy mayo that was the perfect flavor-enhancing sauce for my can of tuna. I have now used it in many lunch and dinner applications. From sushi, to rice bowls, over stir fry, pan seared ahi tuna, or mixed with a plain can of tuna. This sauce is now my go-to flavor for many Asian recipes.

As someone who is egg-yolk intolerant, I have substituted my homemade egg white mayonnaise in this recipe. I usually make this sauce with regular mayonnaise when preparing it for other people and it tastes delicious!

What is Kimchi?
Kimchi is a fermented Korean side dish made with salted vegetables. The most common version uses Napa cabbage and Korean radish. Usually, kimchi also contains a paste of red chili powder (gochugaru), garlic, ginger, and scallions. Kimchi tastes tangy, spicy, (sometimes fishy) and is packed with gut-friendly probiotics. It’s delicious, and healthy for you too!
How do you store spicy kimchi mayo?
Store this sauce in an airtight container in the refrigerator for up to 3 days. Often, this sauce can separate while being stored -simply whisk to combine sauce again.
Where do you buy kimchi?
Kimchi is sold near the produce or fresh food refrigerator section at your local grocery store.
Can I add kimchi to my sauce?
To add an extra crunch I like to finely chop bigger cabbage leaves from the prepared kimchi and add them to the sauce right before eating.
How spicy is this mayo?
This kimchi mayo has a slight kick to it. I would rate it as mildly spicy. If you’d like more spice, you can add a pinch of Cheyanne pepper to your mayo.

Ingredients:
Mayonnaise – the creamy base for this sauce
Kimchi Juice – get this by pressing down the vegetables in a jar of kimchi and the extra liquid will rise to the top
Japanese BBQ – This is my favorite brand of Japanese BBQ. But you can also substitute any sweet Asian sauce like eel sauce or teriyaki sauce.
Soy Sauce – to add flavor and some saltiness
Ginger – To add a little kick of flavor

How To Make Spicy Kimchi Mayo
Measure out all ingredients and add to a small bowl




Whisk thoroughly


Taste and add more or less ingredients to fit your preference

Let sit for an hour or two to further combine and enhance the flavors

Use by mixing into or topping your favorite Asian meals

Store this sauce in an airtight container in the refrigerator for up to 3 days. If sauce separates while being stored simply whisk to combine sauce again.

- 1 tbsp Kimchi liquid – get this by pressing down the vegetables in a jar of kimchi and the extra liquid will rise to the top

- 1 tsp Soy Sauce
- 1/16 tsp Ginger (pinch)
